This is an old Canadian recipe that my Grandmother, and then my Mother made, & now I make it, simple and delicious.
Cooked Salmon fillet, remove any bones, about 1lb to 1-1/2 lbs.
An equal amount of mashed potatoes
Saute' a small minced onion
Saute 2 sticks minced celery at the same time
Mix all ingredients and place in a double crust (top and bottom) pie
Bake @ 375 until golden brown
Serve with grated cheese, and Ketchup (yes Ketchup).
I promise that you'll love it and finish the leftover pie the next day.
