Hi, here is a great fish recipe given to me by a friend who was a sport fisherman near San Francisco, CA.
- 3 lbs. rock cod fillets or other firm white fish
- salt and pepper
- water
- 6 green onions, sliced
- 1/2 cup chopped parsley
- 1/2 cup soy sauce
- 3/4 cup vegetable oil
- lemon wedges
- Hot cooked rice
Cut rock cod into pieces and place in water just enough to cover fish. Add green onions and parsley, salt and pepper. Bring to a boil, cover, and cook gently over moderate heat for 20 mins. Pour off all but about 1- 1/2 cups of the cooking liquid if necessary. In separate pans heat soy sauce and oil until very hot. Pour soy sauce, then oil, over fish (oil should be hot enough to sizzle as it is poured over fish). Cover tightly, remove from heat, and let stand for 10-15 minutes. Serve fish and some of the cooking liquid over hot, cooked rice. Squeeze lemon juice over all if desired. Makes about 4 servings. It is great served with garlic french bread to dip into the sauce.
